Totally Kids Specialty Healthcare is a small pediatric sub-acute hospital with 45 patients. We are the only long-term care hospital dedicated entirely to children. Our residents' ages range from newborn to 21 years of age and we are dedicated to enriching the health and quality of life for our kids. Position Description:
This position oversees and is responsible for the dietary department. The department is responsible for food preparation for all residents on the campus.
Reporting Relationship:
Under the direct supervision of the Administrator or their designee with consultation from the Registered Dietitian.
Qualifications:
Physical Requirements:
- Must be able to crouch /stoop as required.
- Lifting Requirements: Must be capable of lifting or carrying objects that weigh up to 45 pounds.
- Must be able to discern colors.
- Physical skills necessary to operate all equipment: must be able to stand, reach in all directions, lift and carry objects. Must have fine motor skills.
- Must have 20/20 vision (correction devices allowed) and be able to appropriately read patient information, posted materials and other written information.
- Must hear (correctional devices allowed) and comprehend well enough to give and receive information for appropriate completion of duties.
- Must be able to speak, read, write and listen in English with a skill level essential for communication with all facility personnel.
- Must be able to taste and smell food for quality and palatability.
- Must have normal physical stamina.
- Must be able to pull or push 100 pounds.
- Must be able to bend and twist.
- Must have full use of both hands.
- Must be able to walk intermittently, six to ten hours per shift.
Psychological Requirements:
- Demonstrated ability to work and function with chronically ill Residents / Clients and their families.
- Demonstrated ability to maintain an appropriate level of emotional control with all patient groups; make appropriate, safe decisions in critical situations.
- Have the ability to separate personal life from work situation and requirements.
- Have the ability to function as a team member, possibly requiring leadership abilities.
- Have the ability to maintain an appropriate attitude; trustworthy, friendly, cooperative, and supportive of good customer satisfaction.
Additional Requirements:
- Dietary personnel will be required to attend all in-services as required by our policy.
- At all times, Dietary personnel will perform all duties in strict accordance with the policies and procedures as outlined in the facility’s Safety and Health program.
Duties Summary:
- Responsible for the daily supervision of the dietary department.
- Plan staff and special function menus.
- Responsible for procurement and storage of all food and supplies.
- Complete initial interview for each resident to determine food preferences and special needs. Maintain profile cards.
- Maintain all department records.
- Ensure the proper handling and utilization of all foods to prevent contamination, increase quality, and reduce costs.
- Interview, select, hire, and discharge dietary personnel as needed.
- Supervise, plan, schedule, and coordinate work of dietary employees.
- Assist in formulation and revision of policies and procedures.
- Develop and conduct Inservice and orientation programs for dietary employees per corporate standards.
- Evaluate department regularly to ensure compliance with all State and Federal regulations with assistance from the consultant Dietitian.
- Maintain department in compliance with regulations and JCAHO guidelines.
- Monitor food and labor costs. Maintain such per MBO.
- Attend conferences as needed.
- Perform all duties per Cook job description when responsible/scheduled as such.
- Establish and maintain departmental procedures including sanitation, safety, and cleaning schedules.
- Maintain adaptability to a variety of job duties and situations.
- Other duties as assigned.
